Quiche with zucchini and ham


We continue the collection of Easter recipes with an inviting quiche with zucchini and ham, easy and quick to prepare as we like!
Ingredients:

A pack of puff pastry
250 g of ricotta
3 eggs
2 or 3 zucchini
An onion
Breadcrumbs q.s.
Extra virgin olive oil q.s.
Parmesan
Salt and pepper

Directions:

Saute the onion in the olive oil (be careful to purchase extra virgin olive oil in a good olive oil shop: it must be top quality for the success of the dish). Add the zucchini, cut into chunks or slices, put half a glass of water and finish cooking.
In a container, put eggs, salt, pepper, ricotta cheese and 4 tablespoons of Parmesan cheese. Mix well and add ham and zucchini.
Cover a mould with the pastry. Prick with a fork and pour the filling. At will add the breadcrumbs. Bake at 180 degrees for 20 minutes.
