Salad of reinforcement

Christmas lunch is coming and today we suggest a typically Christmas recipe: salad of reinforcement that can not fail on a table the day of the Neapolitan Christmas Eve.
Many traditions are linked to its name: according to a first version this salad is prepared for the dinner of Christmas Eve and reinforced every day until New Year's Eve, while the second version this salad serves to reinforce Eve dinner considered as lean because based on the fish.




Ingredients
:
  • 60 grams of anchovies
  • Vinegar
  • 50 g capers
  • 1 cauliflower
  • 50 g cucumber
  • Extra virgin olive oil
  • 100 grams of black olives from Gaeta and 100 grams of green olives
  • 100 grams of peppers
Procediment: Boil the cauliflower in boiling water after divided into many peaks and let it cook for 10 minutes. Drain the peaks still a little raw and let cool on a colander. Once cooled place its on plate and garnish with capers, anchovies cut in half and without bone, olives and peppers cut into strips. Finally, in a bowl, prepare an emulsion of 4-5 teaspoons of olive oil and 3 of vinegar and
pour it over salad.
