Risotto with pumpkins and sparkling wine

Halloween is approaching and although it is a traditional American holiday it combines very well with the typical Italian cuisine.
So why do not content children and why not, even great, with easy recipes?
For example the risotto with pumpkin and sparkling. Risotto is a typical Venetian dish, while the pumpkin is the quintessential symbol of Halloween.

Ingredients for two people:
200 g of rice
150 g pumpkin
50 g butter or margarine
1 onion
50 g of Parmesan or Grana Padano
Half a liter of broth
Half a glass of sparkling wine
Extra virgin olive oil

Cut the pumpkin into cubes and leave to stew slowly in the broth until the broth begins to boil. After that, put the pumpkin in a blender and blend.
In another pan put a drizzle of oil with the chopped onion and half of butter. When the onion is browned, add the rice and then the sparkling wine, stirring constantly.
After about ten minutes add the pumpkin puree and the broth. Once the rice is cooked, add the Parmesan and butter.

If you want to buy sparkling wine to match with the risotto I suggest you Italian Wine Selection, Italian wine merchants online. Take a look to the autumn wine promotion: you will find a wide selection of sparkling wines, champagne and red and white wines.
