Soup with mushrooms and chestnuts


Fall: If you are sad for the end of the summer, you can console with the typical seasonal products, such as mushrooms and chestnuts.
If you love soup, I can suggest you the soup with mushroom and chestnuts.
Simple and delicious, this soup will surprise you with its delicate and creamy taste.

Ingredients:
500 g fresh mushrooms
30 g dried porcini mushrooms
100 g vacuum-packed chopped chestnuts
1 onion
5 dl broth
6 tablespoons organic extra virgin olive oil
2 cloves of garlic
1.25 dl of liquid cream
Truffle oil
Lemon
Salt and pepper

Procedure:
Soak the mushrooms in half a liter of warm water. In a pan put the olive oil, chopped onion and garlic. When the onion is golden add the mushrooms and chestnuts. Dry for a couple of minutes and then add the broth.

Drain the mushrooms, retaining the liquid, then chop finely and incorporate them into the mixture. Meanwhile sift the mushrooms liquid to remove any impurities adding the mushrooms. Then cook for 20 minutes. After that, transfer everything in a blender with the cream and the juice of an half a lemon and mix.

Transfer the soup in a saucepan to heat and then serve, add some truffle olive oil.
