Struffoli

 Christmas in Naples and Sorrento means also struffoli, which are the typical Christmas sweets. Struffoli are not born at the shadow of Vesuvius, but in Greece, and from there arrived in the country of Pulcinella.
Each family guards jealously its recipe. Besides, there are those who prefer them small, some larger, those who add the chocolate, customizing at will the recipe.

We offer you the original recipe, hoping it will be appreciated.

Ingredients for 10 people:

6oo g of flour
4 eggs + 1 egg yolk
2 tablespoons of sugar
25 g of lard or 80 g of butter
1 small glass of limoncello or rum
Grated zest of 1 lemon
1 pinch of salt
Oil for frying
To decorate;
400 g of honey
colored sprinkles
300 g of candied fruit

Directions:

Place the flour to a fountain. Add sugar, butter, eggs, lemon zest, the lemon and a pinch of salt. Knead until obtain a smooth dough that is detached from the hands. At this point give to the dough a round shape, to divide into other smaller balls that we will work to obtain the desired thickness of the sticks. Cut the balls and place them on a floured cloth.

Now we can fry. Before immersing struffoli in boiling oil, sieve and fry them a few at a time.
Once ready, heat the honey in bain-marie and add it to struffoli, decorating with sprinkles and candied fruit.
To give a Neapolitan touch, place struffoli as a round shaped cake (to facilitate the operation to put a glass in the center) and then decorate, putting an orange in the center.
