Crepes with mushrooms
Crepes with mushrooms are a tasty main dish, easy and sophisticated. Great to prepare for a special occasion or to change the classic weekly menu.
Ingredients for 8 people:
3 eggs
1 cup milk
2 tablespoons of flour
White sauce q.s.
800 g mushrooms, fresh or frozen
1 onion
Salt q.s.
Extra virgin olive oil
Directions:
For the crepes:
Place in a bowl the eggs, the milk and the flour. Mix energically everything, then let stand the dough for an hour and a half.
In a non-stick pan heat the olive oil and pour the mixture with a spoon, remembering that, on average, for a crepe you will need 3 tbsp.
For the filling:
Fry the chopped onion in oil and then add the mushrooms. Once golden add the sauce.
Fill the crepes with the sauce thus obtained and fold in half. Cover with a little bit of sauce and then bake in a preheated oven at 180 degrees for fifteen minutes.
Our suggestion: In order to enhance the flavor of the mushrooms add a few drops of truffle olive oil that gives grit and flavor to the dish.
Serve with a good full-bodied red wine such as Merlot, Pinot nero or Cirò nero, to buy in a wine shop or to buy wine online.
