New wine: autumn excellence

Only since the 5th of November, you can uncork the bottles of one of the most renowned wines: the new wine.
This year, the sweet Italian red wine production has been two weeks in advance compared with the arrival on the market of the French competitors Beaujolais nouveau, which will be enjoyed only after the third Thursday of November, the 18th of the month to be more precise.

But what does the new wine distinguish from the classic wine?
First of all, we must remember that the new wine comes from a winemaking process that has nothing to do in respect to the classic production. This method was invented by French researchers in the '30s during an experiment.

In fact, the new wine is ready from few weeks on the grape harvest. This is possible merely through the carbonic maceration, from which comes a sweet, fragrant wine, with raspberry and strawberry hints.

The process consists in filling a bin with the grapes letting it stand for about 7 and 18 days at a temperature of 30 °, after the saturation of carbon dioxide gas. Part of the grapes located in the lower part of the container is crushed, releasing the must which starts the fermentation process and the alcohol and carbon dioxide issue, spreaded then to all the grapes. After the grapes are crushed and placed in a tub to keep the fermentation process, in which the sugars will turn to alcohol. The aging of wine is very fast, but the resulting product is unstable and it must be consumed within six months.
