Cod Salad

The salads are considered a typical summer dish, classically seasoned with lemon oil or vinegar but the nature offers a variety of products typically autumnal that can be ingredients of tasty and full of flavour salads of autumn.
Here's an original and easy to do recipe:








Cod Salad

Ingredients for two:
  • 200 g of desalted cod
  • 150 g grape Verdicchio
  • 50 g of white figs
  • 30 g of ham
  • 40 g of pears
  • 50 g cheese
  • 10 g of white truffle and a tablespoon of truffle oil
  • 100 g of fresh porcini mushrooms
  • 200 g salad (Gentilina light and dark, curly, baby spinach, arugula, beet)
  • extra virgin olive oil
First, thoroughly wash the salad and, after drying, store it in a dry place. After blanched the cod cut into pieces large enough and compose the salad mixing the grape berries cut in half, the ham, thinly sliced pears and pecorino shavings. Finally drizzle with extra virgin olive oil, mix thoroughly and add the mushrooms and white truffle slices. A variant is the salad dressing with the prized truffle olive oil or, for those who love strong flavors, the chili olive oil.
