What to eat in winter: soups


Not everyone loves the winter, cold and low temperatures. If during the summer season prepare an healthy, light and balanced lunch or dinner is a very simple thing, accomplices season vegetables that can be easily consumed cold too, in winter it’s another question.

But there's an alternative: we are talking about soups, little warm and creamy pampering for our winter diet.
Prepare a soup with seasonal vegetables is simple and fast. Does not take much time to prepare an hot and light meal. We need only fresh ingredients and refined olive oil.
So here a recipe to jump at: onion soup.

To prepare a good onion soup we need 500 g of onions, 20 g butter, 50 g of parmesan cheese, ½ cup white wine, 2 tablespoons of flour, 1 teaspoon of sugar, beef broth, salt, pepper and croutons.
Cut the onions into thin slices and put them in a pan in which we have allowed warm butter. When they start to brown, add sugar and flour and stir until the ingredients will not be smooth. Add the wine, blend and add the hot broth. Season with salt and pepper, cover and continue cooking over low heat for about an hour, stirring occasionally. Add the croutons and enjoy your meal! Add at will a drizzle of organic extra virgin olive oil.
