Lemon chicken

We are in summer. What fresh and tasty dinner to eat? Hot temperatures and muggy heat would go hungry even the most greedy.
What to cook of light and fresh?
Today we proposes you the recipe of the lemon chicken, a second course coming directly from distant and exotic China, even if the ingredients are all strictly Mediterranean.

Ingredients for 4 people:
600 g chicken breast
2 eggs
Salt q.b.
Flour q.b.
200 ml water
100 ml white wine
1 tablespoon of corn flour
2 teaspoons of sugar
1 organic lemon untreated
Extra virgin olive oil for frying

Directions:
Cut the chicken into strips, and then pass the egg into the flour. In a pan put plenty of olive oil and, once you reach the cooking point, place the chicken. Once golden brown, remove from the heat.

For the sauce:
Dissolve the corn flour with half a glass of cold water, then put on the fire. Add wine, lemon juice, 2 teaspoons of sugar and the remaining water. As a final touch add the lemon zest and let boil and thicken all the ingredients, the sugar in particular, which you must blend with the sauce.
Now we have almost ready: we have only to take a big pot to lie down the lemon sauce and the chicken. To give more flavor to the dish put a drizzle of lemon olive oil and garnish with a slice of lemon.
